Fresh produce arrives every morning in its whole form and is prepped in each of our locations. We make almost everything in-house from scratch, including our sauces, pickles, curries and patties. Any item not made in-house comes from suppliers we have thoroughly vetted and trust.

HEALTH & ORGANICS

We care tremendously about the food we serve and that enters our bodies.

Eating plenty of whole plant-based food contributes to good health. All our meals are designed to provide a balance of protein, carbs and fat, and the full array of vitamins and minerals. The proteins are complete, the carbs are complex, and the fats are "good" because they come from plants! And since fibre is only found in plant-based food, we can assure you that you are getting a proper dose of that too.

We aim to select organic for produce that is otherwise known to have a significant negative environmental impact or lots of pesticide residue, such as greens, berries and soy products. We use the Environmental Working Group’s Dirty Dozen list as our guide for organics.

We Like Reusing AND Composting

We offer a 35¢ discount to anyone supplying their own container. Otherwise we are happy to provide compostable or recyclable takeout materials for all of our delights.

Moreover, our kitchens produce almost nothing that enters a landfill:  the little waste we produce is either composted or recycled.

Footprint

The more plant-based food we eat, the more environmentally sustainable for the planet.

Growing plant-based food produces a fraction of the waste water run-off and carbon and methane gas pollution associated with animal-based food production. It also requires much less fresh water, energy, feed, fertilizer and land, enabling large swaths of our planet to remain or be returned to forest.

We also source local as seasonally available to limit the environmental costs of transportation.

Is Everything You Serve plant-based & Gluten-Free?

Everything we serve is made from plants and of ingredients that are naturally gluten-free. Because tamari is often made with wheat, and oats are often milled together with wheat, we specifically source these items certified gluten-free, defined as less than 20ppm.

In other words, we do our best to ensure that everything we serve contains less than 20ppm of gluten but unfortunately we cannot guarantee it.

How are your oats gluten-free?

Oats are naturally gluten-free, but are often processed in the same facilities as wheat and barley. Our oats come from Avena Foods in Saskatchewan, who have gone through a Gluten-Free Certification Program (GFCP), and are 100% gluten-free!

Are your take-out materials compostable?

Generally, yes! But some items are recyclable instead.

Is your food organic?

Many of our ingredients are organic. We use the Environmental Working Group's “Dirty Dozen” list as our guide for organics at Kupfert & Kim. This list identifies produce with high levels of pesticide residue when not grown organically. Our organics generally include kale, arugula, bok choy, pea sprouts, cucumbers, apples, pears, cranberries, bananas, blueberries, quinoa, toasted sesame oil, dulse, chia, goji, tofu, tempeh, and soy milk.
